Peach and Poppyseed Chicken Salad Sandwiches

Peach and Poppy seed Chicken Salad Sandwiches

I love love chicken salad sandwiches.....ones WITHOUT mayo that is. I came up with this recipe and it has never disappointed! I eat mine on a croissant with lettuce and mustard.   Honey bunny, however, eats his plain on a croissant. 

What you need:
1 can peaches
Poppy Seed Dressing (1/4 cup ish) I use LoftHouse brand
2 chicken breasts - cooked and shredded - (I boil mine and then shred)
2 stalks of celery - finely chopped
1 handful cashews

What you do: 
Take a medium mixing bowl and combine shredded chicken,  chopped celery, and handful of cashews, combine. 
Dice the canned peaches into little pieces and stir those in. Then.....Add the poppy-seed dressing slowly until you have reached the constancy desired. I like mine a little drier since I add mustard, but Kyle likes extra dressing in his. 
Next, put on a "bread" and add condiments as necessary.

Chicken Salad Sandwiches (Using Tzatziki Recipe)

Tzatziki Chicken Salad Sandwiches

I love love Chicken Salad Sandwiches. However, I hate mayo and miracle whip. This yogurt based, greek substitute is the best! A different spin on chicken salad. Leftovers keep for about 2-3 days. I eat on a croissant.
  • 1 c cooked chicken breast, shredded or  chopped
  • 1/2 cucumber
  • 1/2 red onion
  • 1/2  cup  Tzatziki Sauce (more or less, combine until texture desired is achieved)
  • Juice of 1/2 lemon
  • Couple dashes ground black pepper
  • Bread or Croissant, this is a sandwich
  • Lettuce (optional)
Chop all veggies into 1/2" pieces and place in a medium bowl. Add chicken, tzatziki, lemon juice, and pepper, and mix together until everything is uniformly coated. Spoon onto bread and top with lettuce. Enjoy!!

Tzaziki Sauce made its first appearance into my life at a restaurant here in Logan, UT called the PITA PIT. mmmmm.  As a mayonnaise/miracle whip HATER this was a great alternative! I make it to include in Chicken Salad sandwiches as a mayo alternative.
What is it? Tzaziki Definition
  • 2 cups plain Greek yogurt (I used Dannon brand)
  • 1 cup diced and peeled seedless cucumber (regular cucumber, seeded and peeled, ok)
  • 2 tablespoons  lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons finely chopped fresh dill, or 1 tablespoon dried dill weed
  • Salt and pepper, to taste
1. In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Taste and season with salt and pepper. If you have time, chill before serving.
Makes about 3 cups
*Note-Serve with vegetables, pita bread, crackers, or make delicious chicken salad sandwiches. Will keep in the refrigerator 2-3 days. Stir before serving.
